An aromatic, juicy and salt n’ peppered Bojo gamay that is so dang JOYFUL. Basically raised in the vines, Thibault Ducroux grew up in a winemaking family in Beaujolais and became enthralled by natural winemaking after reading the exceptionally thoughtful works of Jules Chauvet – seriously check out Le Vin en Question, you may just be inspired to become a winemaker yourself! He began his own project with a mix of owned and rented vineyards that were either organic or in conversion to organic, and the mindset of low-intervention winemaking. The grapes come from two granite and schist-stuffed vineyards, one with 40-year-old vines in Les Charmes, and the other with 50-year-old vines in Corcelette. The gamay was carbonically macerated and aged in concrete for eight months melding lift with luxury. Black plums, trampled peonies, juicy wild Ontario blueberries, green raspberry leaf tea tannins, pink peppercorn & a sprinkle of salt. Enjoy alongside beef cheek goulash.
