Wild fermented for 5 to 6 months in tank followed by 4 months in barrel, . . .

An unapologetically expressive & aromatic rosé that laughs in the face of other flimsier rosés! With alluringly ripe fruit and a dry, stony finish, this cheeky take on Greek grape Xinomavro comes from certified biodynamic vineyards grown at altitude, giving complexity and freshness to this marvellous, unexpected summer sipper. Wild fermented for 5 to 6 months in tank followed by 4 months in barrel, this is savoury perfection: tomatoes on the vine, olive tapenade, negroni if it was a wine (seriously) and the whiff of red fruit without the fruit (like, the feeling). Poised tannins and a rosy florality round out what feels like a perfect drinking experience but what do we know! Pair with Bob’s Burgers and maybe an actual burger too.
