Originally grown on low-yielding, mountainous plots, Pecorino was abandoned for higher-yielding varieties until it was restored through growers like Tiberio, eager to see distinct, terroir-driven expressions thrive in Abruzzo again. Fermented and aged in tank, this soaring Pecorino is deliciously lean and aromatically precise, a real pleasure to drink and relish unravelling in our minds – white peach, golden melon, honeysuckle, dewy sage, steely grapefruit with a salty, umami finish. Perfect with anything green – pesto, peas, chimichurri, green goddess! – and the sound of cicadas on a summer’s night.
