A spiced, polished and zero-zero crémant from myth and mysticism. The world famous wines of Bénédicte and Stéphane Tissot are prized, punctuated & polished. Working with as minimal cellar intervention as possible and great biodynamic care in the vineyard, they represent some of the best the Jura has to offer. The pinot noir for this bodacious bubble is picked from two vineyards (one planted in 1961 and the other in 1964), pressed to make a white juice, and then fermentation took place in high quality French oak barriques, 1/3 of which are new oak for a hint of richness. A spice shop nose, heavy on the fenugreek, sourdough starter, hazelnut praline, canned peaches meets red apple, preserved meyer lemon & a mouthful of fleshy, thick-skinned wild cherries that builds up like a mighty fortress with every sip. Pour alongside I Praise My Destroyer by Diane Ackerman.
