The grapes come from old, organic vineyards, resting on calcareous clay soils that impart delicate, mineral elegance. Aged for 18 months, in 75% used oak & 25% new to add subtle and integrated spice. Nootka rosehips, tobacco flowers & a full strawberry-field basket, eaten after you’ve taken shelter in the nearest abandoned wood stable. One review suggests pairing with, “…cold cow tongue, prepared both in the Roman-Jewish or French way. A perfect compliment…”, who are we to question.
