This exquisite, sweet pear wine was made from the Fribourg variety, Poire a Botsi, an extremely rare variety that was the first Swiss fruit to gain AOP status, grown by only about 20 farmers in the region. This exquisite, sweet pear wine was made from the Fribourg variety, Poire a Botsi, an extremely rare variety that was the first Swiss fruit to gain AOP status, grown by only about 20 farmers in the region. Locals preferred to eat the pears rather than distil it like their grandparents did, but former biologist Jacques Perritaz clearly saw a glimmer of something magical in them, creating this brilliant, nectareous elixir that drinks like molten meteorite. It’s dense and luscious but with a brilliant acidity and crystalline precision that is utterly enchanting and pitch perfect in every way – green figs, maple sap, sticky toffee pudding, overripe peach & the very first time you had Sauternes properly paired with a dessert (life-changing!). Pair this with an astronomically-sized croquembouche or a Ferrero Rocher tower.
