An intricate & savoury sparkling from one of our favourite storied winemakers doing newfangled things! Year after year the Durrmann family winery makes super fun, low- or no-sulphur wines on their picturesque biodynamic farm. ‘Toqué,’ the name of this aromatic & bubbling pinot gris, is an elaborate pun on the Alsace’s particular pinot gris, which locals call ‘tokay,’ meaning ‘crazy.’ We don’t really get this pun, but do appreciate this apricot-toned sparkling that feels like plunging your face into a cold, babbling brook after one too many Zoom meetings with the one who refuses to retire. It’s full of face-slapping acid and unlike other pet-nats, it’s disgorged. Meaning, it doesn’t stop at simply fun; it’s also clear, elegant & a tiny tiny tiny bit like while champagne. Think palmful of pomegranate seeds, geyser to rival Old Faithful & 7D-brand dried mango. (Does 7D stand for seven-dimensional?) It’s one of those wines to pair with everything but seared scallops served in their shell would be kinda chic and you deserve that!
