An umami-rich, verdant and vigorous dual-vintage Brut Nature from a legend. GWI’s second Champagne producer is in the house!! Timothée Stroebel is a main character in the grower Champagne movement, farming steadfastly organically, and with immense dedication to low-intervention winemaking, to produce some of the finest Champagnes from the premier cru village of Villes Allerand, in the sub-region of Montagne de Reims. A new cuvée to Timothée’s lineup, the famous blend of old-vine pinot noir, pinot meunier, and chardonnay come from respective sand, limestone and clay plots, are direct pressed (FUN FACT! The '18 meunier contributed a *little colour!), spontaneously fermented in barrel, then rested on lees for seven months picking up texture. Flinty, caramel scented marker, apricot yoghurt drizzled in honey, loaf of bread leesiness, lemon-lime sorbet, a chalky, generous, candy necklace texture & underripe strawberry backbone. Pour alongside BIG DEAL DAYS – a birthday, a birth, an adoption, a plan for the future, a move, a project completed.
