Macabeu, Côtes Catalan, France
An aromatic, compelling and truly sensational zero-zero skin-contact from a master of flavour density – at the lowest percentages in town! Tom Lubbe and his wife Nathalie along with New Zealand oenologist Sam Harrop began Matassa in 2002. Today their 20 hectares at the foot of the Pyrenees see biodynamic and organic practices, with as little intervention as possible in the cellar. FUN FACT! ‘Matassa’ is an old Catalan word that describes the thicket of a forest. Part of the iconic and experimental Brutal line, the old vine macabeu is handpicked from slate-rich soil and macerated on skins for four weeks to pull spell-binding texture. Forsythia, fresh apricot, bewitching (we should know) coastal minerality, citrus grove, grapefruit pulp & a bitter herb tannin structure. As one importer wrote, “In one sip there is the world”, enjoy while spinning a globe round n’ round, where it stops, you shall go!
Toronto, Ontario
Honey butter sourdough toasted to a deep dark crunch, folded into smooth milk chocolate. This bar was created in collaboration with Dear Grain Breads, using their world-class sourdough bread! Each Chocolat de Kat creation is a tiny piece of edible art! Kata and her team dream up, hand paint, shell, fill and cap each one with meticulous care and attention to detail.
