A freshly-fruited, bone-dry and sublimely pink sparkling rosé from Burgundy. Montreal born, globally experienced winemaker Patrick Piuze worked with respected winemakers Olivier Leflaive, Jean-Marie Guffens and Jean-Marc Brocard before beginning his high-spirited project in 2008. Patrick hunts down old vines from top notch growers, picks the fruit by hand himself, and works tirelessly to express the unique aspects of the Chablis region. The pinot noir grapes were hand-harvested in the town of Tonnerre, a few miles from Chablis, saw a quick maceration on the skins for this pomegranate-kissed colour, fermented in stainless steel tanks, and aged for nine months on the lees to plump before disgorging. Chalky seashells, roses and daisies, vibrant cherry yoghurt parfait, bitter almond, strawberry donut filling & orange skin. Enjoy alongside cheese tteokbokki.
