A salty, mineral and spiced, zero-zero Quebec sparkling that contains multitudes of multitudes! Quebec wine heroes Pinard & Filles, aka Catherine Belanger and Frederic Simon, organically farm a tiny 2.2 hectare area and fully embrace experimentation, a minimal-intervention mindset & zero sulphur additions. Hybrid grape heroes, the team is herculean in their ability to lift these less appreciated grapes up to their proper place – a regal, cold-climate pedestal we are lucky to experience. The 2022 ‘Supernova’ is a non-dosage, traditional method sparkling made form a blend of mineral, fruity chard (40%), earthy, aromatic pinot noir (40%) and tart, spiced pinot meunier (20%), that were all direct pressed and spent 24 months aging in Burgundy barrels, before 12 additional months of lees aging in bottle – enough time to reach explosion, one of the final stages of the death of a supermassive star, as the core collapses inward, leaving behind one perfectly formed substance, this bottle. Luxe n’ leesy, green apple cotton candy meets chalky candy necklace, salted butter, grass, salty PRICKLES, crispy acidity, rushing river minerality, rising doughnut batter, cardamom, nutmeg & a tiny yet lingering peck of mint. Pour alongside birthday karaoke while singing along to the 7 minute long, 1995 Oasis masterpiece, ‘Champagne Supernova’.
