Unlike many other Sicilian varieties, grillo is not an ancient grape, it was actually created in 1873 by agronomist Antonio Mendola by crossing the regional grapes: fresh catarratto and aromatic zibibbo (aka muscat of Alexandria). Salty lime gatorade, peony, sand pear, white peach, flowering mint and sage, clay & chalky minerality to close out. Enjoy with shrimps doused in garlic butter, battered and fried shrimps or shrimps fresh off the fire.
