The epitome of a glou-glou, although it is from Italy so perhaps a…gorgoglio gorgoglio – translating to GURGLE GURGLE! (awwww). Situated just outside Verona, in the Morainic Hills near Lake Garda, ‘Vini Sassara’ is a new project from longtime natural winemakers Alessia and Stefano Bertaiola. With a background in agricultural research and development, Alessia joined forces with third-generation winemaker Stefano and together they organically farm a 10-hectare site that has been in Stefano’s family for 50 years. Six days of maceration in fibreglass tank with an additional five months resting in fibreglass to keep this bby-doll scrumptiously high-toned. Cranberry mineral water, salted raspberries, lingonberry cream, blood orange juice, rhubarb in grass & white pepper sneeze. Try with cacio e pepe!
