Poivre d'Âne is a winemaking project focusing exclusively on terroir driven, low intervention wines. They partner with local biodynamic and/or organic farmers and are committed to using only local yeasts and zero manipulations other than a lil sulphur for stability. The team currently works with eight different winemakers and their sites across the south of France. Smoked salt, ripe and underripe cherries, raspberry leaf tannins, raspberry jam bars & violets. Enjoy with juicy lamb skewers and researching how to go about adopting a baby donkey.
