Chanterêves is the négociant-vinificateur  project of wife and husband Tomoko Kuriyama and Guillaume Bott, two super-talented oenologists who met in 2005 working at the super-famous Domaine Simon Bize. Working with organic grapes from Burgundy and beyond, their wines are all about clarity and precision and are only slightly more natural and experimental than their illustrious wine pedigrees would perhaps suggest, a recipe for romancing wine lovers everywhere (especially us). This stunner reads like the majestic Canadian Shield, layers of shimmering minerality weathered smooth by a millenia of natural whims, immense and lithe, robust fruit with a mouthwatering finish, the 360º pleasure of a blanket burrito. Wine this good hardly needs an occasion but if you must, a whole roast duck and oyster mushrooms could do it justice.
