Welcome to a masterclass in poise and aromatics, this wine feels akin to bottling a glacial alpine river in spring. Christian Binner’s wines come to us from the Alsatian heartland in northeast France, with ‘Saveurs’ being a perfect introductory bottle to a lineage of winemaking stretching back to the 1770s. With biodynamic values (think homeopathy, but with grapes), this wine, like all of Binner’s whites, sees little to no sulphur and a late harvest for their area – around early-mid October giving uninhibited, complex & expressive wines through extended ripening. Combining all of the grapes and two very different vintages creates a unique, dense, but bright profile. Minerality like shallow water snorkeling and an accidental ocean gulp, with a pit-stop-gas-station petrol waft and pure white light acidity, delicate and luminous as a herd of fireflies. Drinks well on evenings with friends who enjoy watching Discovery Channel specials on sheepskin rugs, with a plate of rotisserie chicken & extra Chalet Sauce.
