Made with a modest four hours of skin contact for the slightest texture & protective tannin extraction. This bubble then spends 24 months on lees fulfilling its destiny as one of the most satisfying pet-nats EVER. Almond + blossom, simmering lemon peel, fresh apricot, chewy lees, fermenting honey & a tight chalky mineral end. Pour alongside two month anniversaries when you know it’s something special.
