Jean-François Clouet lives above these historic chalk-lined cellars (dating back to 1741!) which still have the fake walls they used to hide their precious product from the Nazis in World War II. Made in a blanc de noir style aka a white wine from red grapes, this delicate but powerfully evocative sparkler is sumptuous and perfect – ripe yellow orchard fruit, a spritz of lemon citrus & butter shortbread with a hint of honeysuckle and white macadamia. Balanced perfectly between crisp & fresh and creamy & full, she drinks like pure pleasure – pair with pigs in a blanket & raw silks by candlelight.
