COS (Cilia-Occhipinti-Strano), was founded in 1980 by this v impressive trio who sought to breathe life back into Sicily’s wine production reputation - which has clearly been an outstanding success. A 50/50 blend, bringing together two local grape varieties to hug and hold one another in concrete tanks gaining incredible texture and colour. Much like the land where this wine was born, it feels HISTORIC - scrappy sands, warm winds, crumbling architecture. There is a lot of power behind the pour; a distinct saline quality met by bitter, toasty almond skins, zips of citrus and floral honeysuckle.
