Chardonnay, Champagne, France | One of the most special Grower Champagnes we know. Jacques Lassaigne is the most famous producer in the chalky little ‘island’ of Montgueux, working biodynamically with almost zero additions. Montgueux faces fully south, an isolated outcropping of chalk that rises several feet above the surrounding plain, planted almost entirely to Chardonnay. Negociant producers use wine from Montgueux to add to blends to add richness, but Lassaigne is truly the broad and creamy yardstick by which all the others are measured. The classic Montgueux Blanc is a blend of Chardonnay coming from 7 different parcels on Lassaigne’s 4 hectare property. Aged in stainless steel with bright citrus flavours veering into low key tropical restraint. Spicy parfum, green leaf, ripe apricot, honeysuckle, Danish butter cookie. Ultra dry and incredible minerality YUM.

Pinot Meunier, Champagne, France | Christophe Mignon’s unique approach to viticulture, affectionately called the Mignon Method, goes further than biodynamics to include phytotherapy, homeopathy and geobiology, all guided by the lunar cycle. “The moon for a vigneron is like a metronome for a musician,” our future husband says, probably gazing wistfully at the moon with all the wide-eyed sincerity of dreamers who just dream, you know? He even employs just one person per hectare, an ambitious and costly ratio that results in low yields of exceptionally high quality fruit. Made of two vintages from two vineyards, the oft-overlooked Meunier grape steps into the spotlight, each plot vinified separately with 5 months on the lees before blending followed by 2 years in bottle and finished without dosage. Incredibly moving & impossibly gorgeous, this is a titan amongst mortals, rich and decadent with notes of burnt honey, white lilac, caramel flan & salted caramel. This is the reason & the season for a croquembouche, shimmering in spun gold.

Chardonnay, Pinot Meunier, Pinot Noir, Grande Montagne de Reims, Champagne, France | An organic & frisky bubble, lallygagging its way to the hoedown of the century. Building on a lineage of traditional winemaking & braced with insatiable curiosity, winemakers Raphael and Vincent work towards biodynamic practices to highlight their diverse & nuanced terroirs. A proven blend of nearly equal parts supple Chard, eloquent Pinot Noir & quiet workhorse Pinot Meunier. Their expressive ‘Brut Reserve’ is fermented with indigenous yeast and minimal dosage, coming together as a luxe, taut & original record of their land. Grown in the village of Ludes on extremely chalky soils, showing glinting copper colouration, with oyster shell and clay pot minerality. An apricot tree in its prime, toasted brazil nut pastry, quince marmalade, sourdough challah & salted, honey-drizzled tangerine. We recommend drinking with your favourite quarter-pounder, large fries and a radiating euphoria from the symphony of sugar, fat & salt.
