Justin rents all of his parcels, working them organically by himself, and opting to stave off the use of added sulphites whenever possible. The 50-year-old gamay vines are harvested from granite and alluvium soils, aiding in ripiening, before carbonically macerating for eight days to lift and lighten into eternity. Candied cherries and hot sugar, florals mix with a gentle pool minerality, warm sunflower seed shells & getting caught in a thicket. Enjoy alongside croquettes, tallow fries and all manner of crisply battered delicacies.
