Like many other winemakers just starting out, he had difficulty cracking into Burgundy’s white-hot real estate market – read: not rich and not born in Burgundy. He turned to Catherine and Dominique Derain, who lent him cellar space and helped him acquire his own vines, which he now works organically in addition to purchasing strictly organic grapes from farmers & friends. These grapes come from the Côte Chalonnaise were partially destemmed, wild fermented and aged for 6 months in casks and barrels before being bottled without fining, filtration or added sulphur. Puckered, red velvet florals meet high-toned red fruit with a snarl of floral funk and the texture of expensive lipstick – Cherry Blasters, blackcurrant gummies, faded wallpaper florals, peppered salumi & a feral, gamey note like this wine is a stray we took in and will love FOREVER. Pair with beef cheeks & lovably bad cats.
