While most rosés are made from a short maceration of red grapes this was made by white grapes and circumstance. 70 to 80-year-old Dona Blanca and Palomino white grapes were hand harvested, but the only place left in the small winery to ferment them was barrels that once held the region’s prized red grape, Mencia. The white grapes got their colour from 4 months spent with that stained precious wood and 3 days of skin contact. A completely unexpected and charming oddity. A salty breeze fresh off the coast with white wildflowers and, a touch of bitter herb. Textured, silky and unmistakably itself.
