Aleatico, Lazio, Italy
A wickedly exciting thought that makes your brain tickle & goosebumps rise. If you think rosé season is over you are big time missing out on this savoury thrill, one step over from the light red party. Winemaker Joy Kull, originally from Connecticut, now farms local, old vine grape varietals on 3 hectares of volcanic vines near Rome, in Lazio. Her ‘Rosato’ is crushed by foot & direct pressed into tanks for fermentation. She uses no pesticides, herbicides or fertilizers except composted sheep manure (her husband is a shepherd!) to allow the wines to sing of their time & place over anything else. The grape, Aleatico, is known for its aromatic qualities, and hand in making other superb rosatos of Italy. This wine is a clear, delightful and utterly distinct. Candied lemons, flower bushels, raspberry jam, strawberry ring pop, rosemary & red liquorice ropes. Drink on bright autumnal afternoons with BBQ sauced up chicken wings.
Stunning olive oil from one of our favourite natural wineries! A blend of hand-harvested Canino, Frantoio and Leccino olives, cold-pressed within 24 hours of harvest, bottled by hand & left unfiltered. Joy’s trees are located throughout the hills of Gradoli, situated in between her flourishing, old vineyards in Lazio, Italy. Shortly after the grape harvest settles and the wines are tucked away in the cellar, Joy spends her November and December days hand-picking olives with the help of battery-powered agitators. Joy notes, “We consciously choose to use these agitators instead of diesel-powered agitators because although diesel-powered may be more powerful and faster, it is less eco-friendly”. Within 24 hours the olives are cold-pressed at her local olive oil mill, never exceeding 27 Celsius during the mashing process, which allows the final product to maintain more if its natural flavours and aromas. The oil is then transferred to a large cistern in Joy’s cellar and left for a minimum of 30 days to allow the sediment to deposit. The unfiltered oil is bottled by hand shortly after and ready for consumption. It is so special to have this ultra-hand made product here for you to enjoy! FUN FACTS! A mild stinging in your throat is a good thing and demonstrates that the oil is rich in antioxidants called polyphenols, PLUS, bitterness felt at the back of the tongue is also a good thing as it is a sign that you are indeed tasting an extra virgin olive oil! The colour of sunflower petals, rich, with the impression of salt, lemon, tender green artichoke, sweet pollen, little nutty like pine-kernels and pine-skin. Try drizzled over strawberry and vanilla swirled ice cream, blended into your afternoon coffee or stirred into an olive oil martini.
