A classically delicious Fiano, here to fill that Tuscany shaped hole inside our hearts. A real treasure trove of history, as Fiano or Fiano di Avellino has been cultivated in Italy for over 2000 years and is scarcely grown anywhere else in the world now. FUN FACT! The flowers are very popular with bees and the grape variety was therefor called Vitis Apiana (Latin Apis, Italian Ape = bee) in Roman times, #SaveTheBees. An organic & low intervention orange from balmy central Italy, ‘Civitella’ also went through malolactic fermentation to calm the acidity and create balance. Fermented in stainless steel tanks with skins for a gentle five days to capture some tannin and florality, then moved to large French oak barrels for nine months to mature and relax. Shimmering gold, with a slight & saline frame, adorned by preserved lemon, honeycomb, fresh kumquat, mandarin pith, apricot skin & sultana raisins. Try with soy-glazed sockeye salmon, and watching your fave guilty pleasure movie – it’s okay, we don’t judge.
