Forget what you think you know about cider, perry and wine and meet Liminal! A one-of-a-kind creation by Grape Witches and Revel Cider, painted with the brushes of Ontario fruit and Italian clay. Made from Golden Russet, Sauvignon Blanc, Bartlett Pears and Maréchal Foch, Liminal sits at the sensory threshold of wine and cider: a merging of worlds. For our second co-creation, we started without a destination in mind, methodically tasting tanks and amphora of wild-fermented wine and cider until the connections between them became clear. And through the haze of that fateful summer afternoon, boy did they ever! Liminal is one of those rare liquids where the final bottling is even better than our test blend. The tannins of the russet skins meld into the salinity of the clay. Tropical Sauvignon Blanc elevates the blueberry-like Foch. Pears trust-fall into everything, making it impossible to pull one fruit from another. And why would you try? Liminal is an ecosystem in glass, a snow globe made in nature’s image. Liminal is complex enough to write an essay about but easy enough to crush. Wild, experimental and so, so delicious. You’re going to want to pour it for your best friends and complete strangers too.
