It’s running history, it’s the present, it’s timelessness and occasionally, it’s inexplicable…it’s natural Burgundy BABYY. Tomoko Kuriyama and Guillaume Bott are the wife and husband behind the (rightfully) cult-y winery Chanterêves. They believe in biodynamics, phytotherapy, minimal intervention & terroir-driven expression. Here it is all about the very stony soils, with big hunks of limestone. The exceptional chard grapes are like a vessel for the land, not unlike a tin-can telephone or a conch shell washed ashore, they are here to link us back to the flesh of the Earth. Crushed slowly for six hours equals supreme extraction & a bit of texture. Being your own ‘twin flame’, sour cream glaze, pure lemon, broken countryside apple, white hot flint, ultrasonic minerality (yes, we think you could hear the minerality if you were a dolphin), interlocking vertebrae of acidity & oak influences that swoop in and around, like a baby bat learning to catch insects. Enjoy now or stash away and forget it exists, you’ll remember when it’s time.
