Among the first to convert his vineyards to biodynamic viticulture, he encountered so much opposition that he declassified his wines from the Anjou, Coteaux du Layon and Bonnezeaux appellations, instead opting for the less glamorous Vin de France label. Nonetheless, word spread quickly of his atypical dry and off-dry Chenin Blancs and now, joined by his son Martial and Bruno Ciofi, ex-manager of Domaine de la Pinte, they’re pushing the envelope even further with regenerative farming, ungrafted vines and homeopathic uses of volcanic sulphur. Crisp mountain air, white peach, elderflower cordial, white citrus, mother-of-pearl minerality, Cointreau-glazed custard & a striking, clairvoyant acid. Drinks beautifully over several days or weeks, especially with brown butter-soaked scallops.
