Working primarily with local Italian grapes, some 80 nuns tend to a combination of vineyards, orchards and gardens planted on volcanic soils, producing characterful wines almost entirely without technology. Made nearly identically to their lighter cuvée, Coenobium, Ruscum spends an extended two weeks on the skins for added texture and taste. Richer and dense with an intriguing amber colour in the glass, expect notes of apricot jam, pear pulp, grapefruit rind, white pepper, hay bales, wildflower bouquet & gunflint. Pair with salty finger foods and a warm summer’s breeze.
