Tiny yields, organic and biodynamic vineyard practices make for beautiful fruit that is barrel fermented with natural yeast over extended periods of time for complexity and texture for days. The Métisse is Olivier’s classic cuvée, mostly Pinot Noir with a splash of Pinot Blanc. Porcelain strawberries in a field of white flowers meet brioche and country cream. Rich and textured with pristine acidity. An extremely low dosage (read: very dry!) this is one of the most exciting terroir-driven Champagne’s we know and something we get on allocation once a year.
