A zero-zero pet-nat, plump with place & savoury país! Winemaker Ignacio Pino Román (aka NACHO) is a committed guardian of local growers, tradition and regional wisdom. Located in Chile’s southern Biobío region, these are grapes with incredible history. The first vines were planted in the 1550s, and it’s one of the rare places in the world where the vine louse phylloxera has not struck with 100-200 year old own-rooted vines often the norm. The saignée (aka 'bleeding' off liquid from a tank of juice in the early stages of the winemaking process) of país is bottled with 8g/L of sugar, which metamorphosed into a soft bubble that wanders around your tongue like a tourist without a map. Strawberry juice, spiced papaya salad, rubbed herbs, roses & tannins that drag down your tongue like they don’t want to leave just yet. The winery recommends you enjoy with ratatouille, not beef bourguignon.
