Riesling like a young-souled, round-glasses-wearing (not yet evil) scientist out to do good. Gabriel and Simon Scheueurmann have been making wine since 2009, and in 2012 completely converted their family’s 30ha to biodynamic farming. Their motto is: “soil is the most valuable asset to the winery”, which consistently propels them forward into the sea of natural winemaking. A more savoury take on the classic 'Riesling Trocken’, aka dry Riesling, ‘Gelber Sandstein’ is fermented in stainless steel & spends 10 months on lees resting & developing texture. The grapes are grown on yellow sandstone, which adds finely chiseled & potent minerality. Yellow summer apples, spiced apricot, with robust & salty finesse. Pour with homemade Sichuan Dan Dan noodles while wearing a Snuggie.
