Family-owned for several generations, this winery previously sold their grapes until recently, when Apostolos Thymiopolos left to study oenology and returned to the winery to make grapes under his own label with a particular emphasis on the powerful Greek grape, Xinomavro. Kinda like Pinot Noir with an extra kick of spice and body, this Xinomavro comes from younger vines than his signature wine, Earth and Sky and spends 8 months in concrete. Medium-bodied with perfumed red fruit and a minty herbal twist, the kind of wine that absolutely no one in the world could have a problem with, like the wine equivalent of finding a twenty dollar bill on the street.
