We are HONOURED to import these glorious Champagnes!! Timothée Stroebel is a main character in the Grower Champagne movement. He farms organically with immense dedication to low-intervention winemaking to produce some of the finest Champagnes from the premier cru village of Villes Allerand in Montagne de Reims. A new cuvée to Timothée’s lineup, Pour Toi is a blend of old-vine pinot noir, pinot meunier, and chardonnay from sand, limestone and clay plots, respectively. All are direct pressed with the meunier bringing a kiss of colour, before spontaneous fermentation in barrel, and seven months on the lees gaining texture. Mossy, verdant, and wholly herby, apricots drizzled in honey, burnt bread, mushrooms between grass, a chalky, generous texture, underripe fruit backbone & subtly oxidative accents. Pour alongside BIG DEAL DAYS – a birthday, a birth, an adoption, a plan for the future, a move, a project completed.
