For the first time in Ontario, may we present the charmingly untameable, single-variety, and untethered wines of Mirka Nestarcová. You may have heard of Milan Nestarec, well Mira is the new, two hectare project dedicated to the most wild wine that Milan's partner, Mirka was missing from the more classic direction that Milan’s production has taken! Focusing on sauvignon blanc, riesling, pinot gris, pinot noir, and cabernet franc, guidance of the vineyard is about as minimal as it gets, shoots grow as close to the sun as they dare, with no trimming or cutting…in fact, rarely does a human hand touch the vines. Because of this choice, grapes are harvested smaller, meaning a different juice-to-skin ratio and therefore structure, to them. In Mirka's words, “a better one”! In the cellar, this feeling of freedom continues as decisions are made in the moment, unconcerned with establishing patterns or set routines carried year to year, instead, their zero-zero wines are the epitome of SPONTANEOUS, from vine to wine. Characterful, audacious and alive, her labels are used to showcase modern dance legends, an influence from Mirka’s dancing background (originally a ballet teacher) that makes all the sense in the world.
