Contemplative, moving & quietly confident these are some of our favourite wines ever. Yes, like, ever. Previously, Nicolas ran a natural wine bar in Paris, which opened his eyes to a world of gastronomy that shaped his palate and understanding of wine. From 2000 to 2007 he dabbled in winemaking (in Aveyron, the same appellation as his great-grandfather worked), then, after acquiring his beloved "Le Mauvais Temps" site, there was no turning back. His land is surrounded by forests and all the biodiversity responsible for the unique character of his elegant wines. The Aveyron is an austere but alluring mountainous region scattered with tough villages, medieval castles & crumbling bridges over bountiful rivers. With a keen taste for the region’s perfectly suited late-ripening local red variety fer servadou & everyone’s favourite white grape chenin blanc, Nicolas makes truly experiential wines. We are beyond pleased to present these deeply authentic wines for the first time in Ontario!
